Put it in an apple pie, it is supposed to really enhance the flavour.

Even one quince will add its flavour in jam with other fruit - maybe apple.

I am in the process of making quince marmalade Mrs Beeton recipe on google. Spent all of Saturday pm peeling and coring which is hard work because quinces are so hard. But the smell while they are cooking is wonderful.

I had 30kg on our tree this year. My neighbour sold most of them at the market for me! I make jelly and use some in lamb and quince tagine. They smell lovely but I can only take a certain amount of the texture of the whole fruit. The jelly is good with cheese or stirred into the gravy you make in the pan after roasting a duck, but a little goes a long way....
The Spanish membrillo is a concentrated jelly which you eat with cheese like manchego.

Mmm, lovely quince jelly.
I did make some once but made the mistake of trying to treat them like apples - they are much harder and have a round hard core.

Or perhaps you could just slice off as much as possible and cook the flesh and extract the juice.

Make quince jelly - delicious and aromatic with cheese or cooked meats. Lots of recipes on google!
