Using surplus courgettes

I've been given some fairly large courgettes from an allotment owner. Any suggestion for using them. I live alone although occasionally invite friend for supper. It will take me forever to eat them up as normal veg. I don't think they will freeze well.

Make some into courgetti, should work well with larger ones.
Stuff with rice and cheese mixture or mince and bake.
Make courgette and pasta soup.
Semi peel, chop, fry gently/briefly and freeze when cold.
Use in Ratatouille.

Courgette Dauphinoise. Slice, dot with butter, add cream, salt, pepper and grated cheese on top. Bake in oven 180° for about 30 minutes.
Agrodolce. Cook gently in olive oil. When cooked add couple of tablespoons balsamic vinegar, pinenuts, sultanas. Cook for another ten minutes. Eat at room temperature.
Oven baked with eggs. Cook in a bit of olive oil in oven with peppers and onions. Make a nest, add eggs and bake for another 10 minutes.

The Ratatouille would freeze well too.

I'll be making Mamie's Agrodolce soon, maybe it's a Roman recipe with the vinegar and the dried fruit, sounds delicious in any case.

Some lovely recopes here,Im feeling hungry! Weve got an allotment so have same issue. We grill with peppers and also do courgetti using julienne peeler. Also got a nice weightwatchers recipe with minced lamb which is meant for marrow I think.

Not low carb I'm afraid but I recently made some courgette, cheese & tomato muffins, also put some grated courgettes into whole meal bread mix. I also found a few good sounding tomato & courgette recipes foe when the tomatoes come on stream (I just googled it).

I made a couple of chocolate and courgette cakes for family birthdays lately. They were gorgeous if I say so myself, really moist. But that only got rid of a pound of the blighters per cake, and the other ingredients more than cancelled out the health-giving aspect! We all kidded ourselves that they were good for us though wink

I chopped and roasted the last batch, with onions, olive oil and garlic, without peeling, and bunged them in the freezer to use later in soups, stews, ratatouille.

One of my friends is getting 5-6 lbs courgettes a day from her allotment so she pickles them and sells them for charity - very popular.

Courgette chutney, it keeps really well.

I did find that adding some butter to the cream cheese frosting was better because otherwise it went runny.

Could your friend give you some zucchine flowers? Stuff them with a bit of mozzarella and an anchovy, and deep fry in a batter made with beer...yum! I recently made six for us to share, and my three-year-old grandson spotted them and ate them all!

Bread and Butter pickle .Just thinly sliced onions and cucumbers in pickling spice I think (not currently at home)

I sometimes make courgette kugel (cake). Side dish for meat or fish.
Make a batter with eggs, flour, s&p. Add tsp baking powder if you want it more risen. Add a finely chopped onion.
Grate courgettes, squeeze out liquid, and add to the batter.
Bake in an oiled loaf tin, hot oven, about an hour.
You can add other grated veg. eg carrots, potatoes.
Freezes well.
Quantities - I'm not good on measures, usually start 2 eggs, 4 tbsp flour, 2 onions and make more than one.

That's a bit like the zucchini slice TriciaF, except the slice has bacon in it. I haven't tried it with meat or fish, only with salad or to take out for picnics and yes, it is a good way to freeze courgettes as otherwise they don't freeze well, although I have frozen the courgette bake.

Courgette bake is made like ratatouille:
Gently fry onions, garlic in olive or rapeseed oil, fry diced courgettes in the same oil, add skinned chopped tomatoes, a sprinkle of herbs and sprinkle grated cheese on top. Bake in the oven, serve for lunch with (or without) crusty bread or as a side dish.

My recipes are a bit like TriciaF's, not good on measures grin but seem to work out OK.

I make a sort of mock macaroni cheese using courgetti and cheesy cauliflower puree as the sauce. Carb free and healthy.
I haven't tried freezing it, but imagine it would be OK.

I cook courgettes with onions, garlic and mushrooms and add herbs and tomato passata. I put them into meal size portions and freeze.

I slice and freeze courgettes with no cooking as we always grow too many. They are fine added to curries, stews, soups etc.

Jalima, thanks for the recipe for courgette slice. It's just come out of the oven now, and looks and smells good. I thought it would brown, but after 30 mins, I stuck in a skewer, and it came out clean. Will have a slice for my supper with tomatoes, and it's a nice quick dish to make. smile
