Using surplus courgettes

I've been given some fairly large courgettes from an allotment owner. Any suggestion for using them. I live alone although occasionally invite friend for supper. It will take me forever to eat them up as normal veg. I don't think they will freeze well.

I got this of a French web site. For a kilo courgettes. Cook and make a puree with seasoning. Freeze as soup for winter. Then thaw out and add a dollop of Rcqueforte or Gorgonzola cheese mix in and enjoy.

Slice longways, steam for 5 mins, cool a little and use a teaspoon to remove the centre seedy bit then dress with a good vinaigrette sprinkle with parsley and eat cold.

Grannynise, I made the soup today. Had a portion for lunch and have frozen the rest. It tasted really good, had to stop myself from having more. I did use cumin instead of nutmeg and added some crème fraiche, not yogurt, as that's what I had in the fridge. Thanks so much for the idea.

If anyone else wants a courgette recipe try googling Jamie Oliver's Brilliant Bacon Courgette recipe (meals for under a fiver). Another good way of using the glut of courgettes.

I like the sound of your soup recipe Grannynise, and I will make it sometime during next week, although I think I will try it with a little cumin instead of nutmeg.

Jamila, it sounds like another type of courgette or marrow, could be seeded from your previous year's crop and reverted to it's original type. It sounds edible, but I wouldn't want to be the one to suggest you try it, don't want to poison you. I would if it was me, just a small piece, raw.

We have a plant growing in the garden (a self-setter) which has leaves rather like a marrow/courgette and is trailing; it has produced three fruits, one of which did not grow properly so I cut it off.
The other two are rugby-ball shaped and sized (so far), cream and green striped, smooth skinned.
We have no idea what it is and are wondering if it is edible?

The small one that wasn't growing properly I cut in half, it had seeds and pale cream flesh; it wasn't a melon as the flesh was a bit firmer.

Courgette soup
500g potatoes, peeled and cut into smallish pieces. Cover in stock and cook for 5 minutes. Add 1kg chopped up courgettes (old overgrown ones work fine) and cook for 5 more minutes. Add a chopped up bunch of spring onions. Cook for 5 more minutes. Check that the potatoes are soft then add 250g cheese of your choice and a bit of nutmeg. Whizz up with a stick blender.

It is much nicer than it sounds. Iserv it with a blob of yogurt.

The soup freezes and reheats well so you don't have to eat courgette soup now ... it might be more appealing when you've forgotten about the courgette glut.

I haven't made any this year yet, but had the rest of the courgette bake for my supper this evening.

Now I need a change so perhaps I'll make the slice tomorrow!

Jalima, we had the courgette slice/ bake, for supper last night and it was scrummy. Even DH agreed. Had a piece, cold, today for my lunch and it was equally good, flavours came through well, and I have frozen the rest, so will see how that goes.

I make courgette soup. Prepare the usual boring thick soup and add a huge portion Rocheforte cheese. Much better....

Since buying a spiralizer a few days ago I've eaten so many courgettes that we only have ONE left! Usually we're swamped with them and end up giving them away, but they disappear to nothing when spiralized and cooked. I had three yesterday, fried in butter with a salmon fillet on top - yummy!

My DH suggests spiralizing them straight into the compost bin.
Courgettes are not his favourite

You can make savory pancakes with them. Just grate, add to a batter mix with seasoning, and onion if liked, then spoon into frying pan, about one tablespoon per pancake. Turn when browned on underside, checked they are cooked through and serve with whatever you like.

Jalima, thanks for the recipe for courgette slice. It's just come out of the oven now, and looks and smells good. I thought it would brown, but after 30 mins, I stuck in a skewer, and it came out clean. Will have a slice for my supper with tomatoes, and it's a nice quick dish to make. smile

I slice and freeze courgettes with no cooking as we always grow too many. They are fine added to curries, stews, soups etc.

I cook courgettes with onions, garlic and mushrooms and add herbs and tomato passata. I put them into meal size portions and freeze.

I make a sort of mock macaroni cheese using courgetti and cheesy cauliflower puree as the sauce. Carb free and healthy.
I haven't tried freezing it, but imagine it would be OK.
