Ingredients

2 eggs
1 spring onion
2 rashers of bacon
Dash of milk
Salt
Pepper
Parsley
Warburton's thins

Handy Hint

Don't over cook the eggs

Method

1. Whisk the eggs and milk together and set to one side.
2. Put a little oil in a pan and add the chopped spring onion and bacon and fry for 2-3 minutes
then add the egg mixture, parsley, salt and pepper and cook until scrambled.
3. Meanwhile toast 2 Warburton's thins,
spread low fat cream cheese (generously) over them then place the cooked egg mixture on top and serve with fresh sprigs of parsley and a little home made mayo.
