Making ‘winter’ dishes in June😱

To be fair, it is just a wee bit warmer (or less cold!) today , but I’m still going to make a substantial Mulligatawny soup tonight, with some bits of chicken out of the freezer, carrots, celery, rice and apple. Might buy a baguette to accompany it, since I’ll be doing some shopping anyway after swimming.

It is here too - made a big pot of lentil soup yesterday, which we've just had for lunch with some crusty bread.

Hearty soup here too, went full Autumn last night -candles lit, blanket, hot chocolate and Practical Magic on TV, lovely, smile
I think we just have to go with the flow and enjoy it all. I'm itching to do all of those autumny craftish things shock

We will be digging into a big bowl of spaghetti bologanaise. I am about to get up and make it so that it can simmer in the slow cooker for an hour or two.

I always have soup for lunch. It is filling but low in calories.

Chicken stir fry here too, with mushrooms, peppers, broccoli and sugar snaps.

It has suddenly dried up and warmed up here so I’m glad that’s not too hot. We had stew yesterday.

I think soup can be had anytime. But have been having chicken casserole and hotpot, usually winter warmers.

I had homemade soup today but partly because our spare freezer packed up and I needed to use up tomatoes from last year's crop. However, it's been warm this afternoon and I picked redcurrants and raspberries, most of which will go in the freezer. I need more freezer space!

Didn't cook today. I had a hospital appointment so we ate out afterwards.
For tomorrow I have taken minced beef out of the freezer in readiness to make a cottage pie for dinner.

Sausage casserole and mashed potatoes for dinner this evening; it's so cold, wet and windy outside it feels like a winter meal is more appropriate.

I made a lamb chop casserole yesterday as it was so cold...but today it was warmer so I had ham salad with crisps.

Roast chicken with all the sides today - not that it’s cold here any more but I bought the chicken 2 days ago and tomorrow is the use by date - but I can’t cook it tomorrow since we’ll be out.

Assuming it’s still warm tomorrow, cold chicken with new pots, salad, and a dipping sauce of mayonnaise, curry powder, mango chutney and lemon juice.

I’ve never actually differentiated between winter food and summer food, as one who can’t abide salad, and eats a lot of fish in various guises. I’m happy to eat a hearty soup or a casserole any time of the year.

Fresh beef ravioli with spinach in a delicious tomato sauce with Parmesan last night. Delicious. My husband has been cooking since he retired and I look forward to dinner time now!

Rocketstop, no I’m not Scottish. I’ve just always found salad hard work and the more imaginative and complicated they are the harder they are. I eat lunch with DD once a week and it is always salad, with a mixture of whole grains, pulses, avocado, olives, tomatoes, feta or cottage cheese and sometimes hot smoked salmon. I love her dearly and I eat it dutifully, while inwardly craving a simple cheese sandwich😂!

Shepherd’s pie was my late son’s favourite for his birthday meal in June. No amount of persuasion or alternatives would suffice so there I used to be on a hot day toiling over a hot stove. Happy Days though.

I plan my meals at the weekend for the following week and shop for them on the Monday or Tuesday. So last week I had planned for salads and of course, had to make them because the salad ingredients won't keep, even though the rain was hammering on the roof and the wind was causing chaos in the garden.
