I’m sure the dog would be very happy, but I’d sweat some onions, add some stock (ideally from the lamb bone but a lamb cube would do) add a handful of pearl barley and some diced potato, carrot and turnip, simmer for about half an hour until all tender.
Meanwhile, I’d cut every scrap of fat off the meat, cut it up small, and add it to the pot for the last 5 minutes, to heat through. Plus some frozen peas.
This is what I do with the scant remains of a lamb roast, preferably one on the bone. It’s very tasty.
