Gluten free panettone!!!!!

Kitty, £10.99 for a GF 500g one from Ethical superstore at the moment.
I use them quite a lot and order lots of Christmas presents from them.
At the moment they have a £10 off offer for over £60 order.

Strangely enough, I had just ordered a vegan one from them when I had my Waitrose delivery a couple of weeks ago, when they gave me a free Heston Blumenthal one for being such a good customer!
So I now have a vegan organic and a chocolate and cherry one, neither gluten free; but I have a glutenfree christmas cake from the Authentic Bread Company.

Now it's been decided that family is here for Christmas dinner, I've started planning.
Dd has digestive conditions which mean she needs 1) soft diet (think baby food) and 2) gluten-free.
Most of it will simply mean adapting or pureeing but I 'm wondering if anyone might recommend a specific loaf for bread sauce. She doesn't eat much bread/toast at all but has always loved bread sauce at Christmas. She's been ill again recently and I 'd like to make this special.
Please don't suggest making my own bread as I don't do bread at all!

Tesco's own brand GF bread is quite soft and I would think suitable for bread sauce.

I am not gluten free, but I like to eat glutenfree as often as possible, as I think too much gluten can be a problem. I think gluten affects my grandson, so I buy other things that I think he would like that are glutenfree, without making a big thing about it.
I use glutenfree pasta in the house, as when eating out it's more difficult to get it.
It's about variety of grains as far as I am concerned, not that I get ill if I eat gluten.
Being vegan is hard enough without having to be glutenfree.
However, when I had the guest house and cafe I catered for glutenfree, nutfree, etc as well as vegetarian and vegan, so I am used to sourcing different things.

I like Dove's Farm GF flour, they do SR and plain. Both very successful for cakes, crumbles, thickening etc. They also do bread flour.
I haven't tried making bread with xanthan gum and when I tried to make pastry it was a disaster but I think you can buy frozen gf pastry.

GF flour is also made from bananas.

mcem I like Warburton's Newburn bread - much nicer than the sliced gf bread.

Mrs Crimble's stuffing is quite nice but I'm not sure if they do a bread sauce mix. However, home-made would be much nicer I'm sure.

I used to use Doves Farm all the time in the cafe, as I found it was the only wholemeal flour that everyone could make pastry with quite easily. But that wasn't glutenfree.
I use Doves Farm glutenfree to make cakes and biscuits.

Pastry is tricky. I roll it between two sheets of clingfilm.

The GF pastry I bought was as tough as old boots.

I always add a teaspoon of xantham gum to my bread recipe. It prevents the bread being too dry and crumbly.

I buy Newburn bread and wraps as well, Jalima. I hadn't realised it was made in Newcastle. You can find it in Tesco's.

DD bought us a 3 in 1 avocado cutter, haven't tried it yet.

It's good that they have a dedicated glutenfree bakery to make that bread. I'm sure my son lived in Newburn when he was a student. It was a long time ago.

M&S do a nice soda bread and a small sliced bloomer which are both very nice. For bread sauce I buy the Sainsbury's baked in store gf bread.

Health food shops sell bread sauce mixes as does our local farm shop. I also noticed that one of the traditional commercial stuffing makers (Paxo?) have started making a gf one.

The ones in the farm shop, which are very good, are by someone Rhodes. I'll check and get back to you.

Found the Tesco soft white and will try it tomorrow with my usual recipe. Hope to take a sample for approval to Dd when I visit in hospital. Will report back.

M&S gf soda bread is very nice and I wondered if it is made by Newburn as it seems very similar (when I can find it)
