That's a bit like the zucchini slice TriciaF, except the slice has bacon in it. I haven't tried it with meat or fish, only with salad or to take out for picnics and yes, it is a good way to freeze courgettes as otherwise they don't freeze well, although I have frozen the courgette bake.
Courgette bake is made like ratatouille:
Gently fry onions, garlic in olive or rapeseed oil, fry diced courgettes in the same oil, add skinned chopped tomatoes, a sprinkle of herbs and sprinkle grated cheese on top. Bake in the oven, serve for lunch with (or without) crusty bread or as a side dish.
My recipes are a bit like TriciaF's, not good on measures
but seem to work out OK.
