Where I live, we're surrounded by sheep, and as I have a sheep chaser dog, I'm very careful to make sure she doesn't get the opportunity. Sheep farmers (and other farmers) work very long hours, in difficult circumstances often, I'd be mortified if my dog caused any problems for them.
One of the local sheep farmers has helped me hugely to train my dog that chasing sheep is not a Good Thing. It's largely been successful, she'll look at me when she sees a field of sheep, and come and lope by my side. I suspect she doesn't entirely trust herself, and I certainly don't. she has few other vices though, except she is a dog, and sometimes behaves like one.
