Ingredients4 garlic cloves
2 egg yolks
1.5 tbsp fresh lemon juice
1 cup extra virgin olive oil
Salt to taste |

MethodCrack the eggs and separate the yolks into a small mixing bowl.
Crush the garlic (either with a garlic crusher or mortar and pestle) with the salt.
Whisk the garlic, salt and egg yolks together to blend them.
With a hand mixer, slowly add the olive oil until a creamy sauce forms.
Add the lemon juice gradually at the end to ensure the mixture remains smooth.
