Boiled fruitcake recipe?

I hope the image will come through. I use a loaf tin. I add a bit more mixed spice than the recipe says and quite often use seeds instead of nuts. I’ve found butter is much the best for flavour but don’t use soft marge.

I’ve also used cinnamon and well chopped apple. I use port or just plain orange juice for the liquid. Marmalade can be a tasty edition instead of some of the fruit.

Saw this on facebook a few days ago and saved it, used to love boiled fruit cake it was so moist.

BTW, I don’t know if you remember the old fashioned loaf fruit cakes? It’s rather like them in texture and flavour. That’s why I like it so much. In fact, I’m making one tomorrow.

We made this for years and measured in cups.
Any size cups as long as it's the same one.

1 cup of milk (or tea)
1 cup of sugar
About 6ozs butter
2 cups of dried mixed fruit as desired
Boil and allow to cool

Add two eggs, beat in
2 cups SR flour fold in
Spice if liked

Bake at 150C Fan for about 45 minutes, test with skewer.

Sorry, it's a bit hit and miss but we just used to throw it together!

4 ounces each of butter
raisins
sultanas or mixed fruit
castor sugar
1/4 pint of water
Put in a pan and boil for 5 minutes
Then add 8 ounces SR Flour ,2 large eggs ,beaten and 2 level teaspoons of bicarbonate of soda ,mix well .Place in a greased loaf tin and bake at 180 for 45 minutes then reduce heat to 150 for 10 -15 minutes.I sometimes substitute some water for brandy and add a teaspoon of allspice .Its quite versatile and never fails .

I didn’t know about boiling it. The one I make is one cup sugar, two cups of mixed fruit, one cup of hot tea. I add dried blueberries walnuts cherries and beetroot powder. Sometimes marmalade. I leave it overnight then add an egg and two cups of flour and baking powder. I’ve got a very old loaf tin which I line with paper, I don’t like the non stick tins that I bought more recently. Can you still get loaf tins?

It's years since I made it.

We always seem to have a couple of very ripe bananas so it's been banana and fruit cake for some time.

Throw it all into the mixer, bake.

I made Mary Berry’s boiled fruit cake recently she uses condensed milk, which wasn’t very nice, even MrOops wouldn’t eat it.

I’ll try again with ordinary milk or use one of the recipes from other posters on here.

This is one my mil used to make for our highland holidays. A slab of it at mountain summits went down very well.

4oz raisins
8oz chopped dates
6oz sultanas
4oz currants
10oz margarine
1/2 pint water
large tin condensed milk

Bring all of the above to the boil and simmer for 3 minutes. Leave to cool for half an hour.

5oz plain flour
5oz wholemeal flour
3/4 tsp bicarb of soda
salt
generous tablespoon of marmalade

I used to do it in a 10" square tin (lined) in a moderate oven for about an hour.

This cake keeps well and actually improves if you store it for a week or two before use.

At times I've thrown in some peanut butter, added beetroot powder, cranberries and chopped walnuts. It always works.

Deliaonline Sticky Prune and Date Cake is good too.

The good housekeeping boiled fruit cake recipe is good, but very rich - more suited as a Christmas cake, so perhaps not what you’re after. It is very good though and worth bearing in mind for Christmas.

All the recipe are similar to mine, but yours it seems has no eggs , is that correct?
I am always on the look out for egg free recipes as my daughter is allergic to eggs

Cherrytree I use my mum's recipe which is very similar to Callistemon's. There's a simple version and a Christmas version, which is the one I normally use. One year I totally forgot to put the eggs in - no-one noticed and it tasted fine, so I expect you could just leave them out of the recipe.

I use to make a boiled fruit cake years ago that had tinned pineapple in it. A very elderly lady gave me the recipe but sadly I've lost it. Does anyone have a copy?

That is a good recipe but I add strong cold tea and if time I soak overnight with fruit.

I make a lovely gluten free fruit cake whereby I boil the dried fruit first. The idea is that if you use dried fruit without 'plumping it up' the resulting cake can be dry because the dried fruit absorbs any moisture during cooking. I imagine soaking it overnight would be just as effective as boiling it?
