I have people coming round in an hour and a half, and I've said I will provide food.
I took delivery of a Ninja Foodi 14 in 1 this afternoon, and like an idiot decided to use it to bake potatoes for the first time. I found a recipe and pressure cooked them with no trouble (you air fry them next to crisp up the skins) but when I opened the lid the skins have burst beyond help. I have made Moroccan spiced butter, which I was going to mash into them then put back into the skins before air frying, but this is definitely no longer an option.
So. Undaunted (?), I have decided to make rissoles with them, by pressing ahead with the mashing then shaping them into patties. But then what? Should I put them in the crisping basket thing, and if so, do I put them on a plate or straight into the pot? Is this a terrible idea?
I have made chicken and ham pies, cajun lentils, salad and garlic bread which is a bit of an odd spread, but I deviated from the plan when the Foodi arrived, so I think I need the potatoes. I have some more spuds that I could draft in, but I took all the large ones out of the bag, so the remaining ones are small and wonky shaped.
Any suggestions would be welcome please - I have an hour or so before I need to run round with a hoover and pretend I don't live in a sty. (I also have a cooker and a microwave if necessary).
