My daughter and her husband had been vegetarians for a few years, and became vegan in January. I found it relatively easy to cook a vegetarian meal for them when they came to dinner (staples were veg lasagne or tomato and spinach cannelloni) but when it comes to vegan cooking, I’m completely stumped. I really dont want to have to buy in loads of special ingredients either. Ideas please!
