Ingredients350 g wholewheat pasta3 tbsp water or vegetable stock 1 onion (chopped) 2 carrots (finely chopped) 1 large courgette (finely chopped) 400g can chopped tomatoes 400g can brown or green lentils 1 teaspoon mixed herbs (dried) |

Method1. Cook the pasta in plenty of boiling water according to the directions on the packet.2. Cook the vegetables in the water or stock for about 5 minutes until softened. 3. Add the tomatoes, lentils and herbs. Cook for a further 5-10 minutes until the sauce thickens slightly. 4. Drain the pasta and place on the serving dish.
