This sounds so, so similar to the difficulties I was experiencing earlier this year. I had several weeks of laryngospasms which were pretty scary, but I can reassure you that they are completely self limiting and don't tend to last more than 60 seconds or so. One thing that might help is slow breathing in during an attack. Rapid breathing will tighten the vocal chords and make things worse. Sniffing in hard sometimes helps as well as it encourages the vocal chords to open.
Have you ever been investigated for GERD? It's often acid reflux which can be responsible for this as well.
