I am very wary of sunflower oils, and also other seed oils, because it contains high levels of linoleic acid which may contribute to cancer risk. If the sun dried tomatoes are in olive oil, which contains up to 20% linoleic acid, I would use it, as others have mentioned, in salad, pasta etc.

Jamie Oliver has a few interesting recipes with sun dried tomatoes as the main ingredient.

Shall experiment when we return from our holiday.

Hello,
I am cooking a lot of Ella Mills recipes so I save the liquid and put it in chick pea and other recipes. It's delicious and too good to waste 🙂

Add a splash of wine wine vinegar , a blob of Dijon mustard and some minced garlic to the oil.

I can't bear to waste the liquid left from pickled gherkins and add olive oil to it.

Keep in jars in the fridge .
You'll have ready made exciting salad dressings.
Shake and enjoy!

Their apricots are delicious. I get their dried apples too, and their giant raisins and walnut halves. I make a winter fruit salad with apples, apricots and raisins and a small amount of chopped dried ginger, soaked overnight in orange juice (from a carton) I cut up the apple rings, they are too big whole.

Just another plug for Grape Tree, I like their products very much and will now try the sun dried tomatoes, probably add a garlic clove or two.
I get all my dried fruit from them.

I buy sun-dried tomatoes in the dehydrated state in a bag from Grapetree, I hydrate them in oil then use the oil for cooking just as you would ordinary olive oil, it’s great for pasta dishes and risotto.

Use it for salad dressings or dry some tomatoes slowly in the oven and when cold put them in the jar.

I am starting to use sun dried tomatoes quite a lot and I buy the jars marinated in oil with garlic and herbs. My question is what can I do with the oil etc other than dispose of it ? Is there something I could use it for instead of wasting it?
