Thank you all. In the end i made a dish with chopped shallots, few chopped mushrooms and carrot and used 1 tablespoon of ground ginger and other spices and a big glug of dark soy sauce and served it with egg noodles, plus shredded summer cabbage, which sounds odd but i can’t eat a meal without a green vegetable, it is a staple for me now
