Howto use courgettes. Other than stir fries.

My invention is a Spanish Omlette but substituting sliced courgettes for usual sliced potatoes on the underside. DELICIOUS!

This year I grew some yellow courgettes, as I could only get those from the nursery. I wasn't too keen on them until my neighbour picked some whilst I was away and made yellow soup. It's a Nigella recipe which she calls Happiness Soup and has lemon, basmati rice and turmeric in it. No onion! This means that my son can have it - a bonus. It is a discovery and I have made it a few times. It's certainly more interesting than the green soup I usually make with ordinary courgettes.

Today we will have roast vegetables ie onions, garlic, peppers, mushrooms and courgettes.
