We always freeze lots of cooking apples (or did before the tree fell down), they do go a bit soft but they're perfectly ok when cooked.
You could toss them in cornflour or arrow root if you have any.
I tend to make crumble because DH prefers it and it's easier but I do like a pie. My mother used to make a pie in a deep dish with just a pastry lid sometimes, no soggy bottoms!
You need to hold the pastry up with a china egg cup or china pie funnel
How frustrating! Don’t know the answer to your question but I think I would have a word with your neighbour and see if she/he would prefer a crumble in the circumstances.
I froze some apples late sept and took them out to make apple pies but it’s really mushy like they’ve been cooked, so what do you think? Are they destined for crumbles or can I still put them in pies if I add some cornflour to hopefully thicken up the juice and not end up with a soggy mess. One pie is for my neighbour who loves my pies ?. Help!
