Apple and mincemeat crumble is lovely. I use about 2/3 apples to 1/3 mincemeat.
Or a ditto pie, layer of pastry on the plate, thin layer of mincemeat, topped with apples, pastry top. Only don’t do what I once did when we had guests and I’d probably had too much G&T - right after I’d taken it out of the oven, the whole thing somehow slid off the plate into the dog’s bed. Where the broken bits all mingled with dog hair and her rainy-day Bonios, etc.
