Here's a favourite of mine.
LEMON PUDDING
Juice and grated rind of 1 lemon
1 cup of sugar
2 heaped tablespoons of SR flour
2 eggs, separated
1 cup of milk
1 oz of melted butter
Put juice and rind of lemon onto the sugar.
Add milk and stir in the flour, beaten egg yolks, and melted butter.
Fold in the stiffly beaten egg whites.
Turn into a greased oven- proof dish, and poach in a
bain-marie at Reg 4, for 40 minutes.
The pudding will be well risen and golden brown.
The sauce will have separated and be underneath the light sponge mixture.
Serve with cream or ice cream.
