Pork spare rib chops - help!!

The meat we had delivered by the butcher today contains 4 (extremely large!!) spare rib chops rather than the Spare rib joint - for 4 - that I asked for.

I have frozen them in 2s and got a chicken out but does anyone have any recipes please for what we can do with them. I presume they need slow cooking?
