Just seen this on a sample menu for a hotel we are visiting soon

Wild mushrooms on toast, Eden Valley brie, burnt butter, hazelnuts

What on earth is burnt butter ?

Linsco56 - sorry to say, but if you don't want to think about the sad face on the animal you're eating, then you're taking your food for granted. Unless you don't eat meat or fish, then much of what you eat will have a face with eyes, a nose and a mouth like yourself. When chefs go to this detail they are trying to educate the eating public who should know what they're eating, how that's been produced and whether that is biologically appropriate for them.

I imagine, but do not know, that burned butter is what used to be called back butter. In other words, butter that has melted and heated until it changes colour to dark brown.

Political correctness being what it is these days, they probably were afraid to be called racist if they wrote the word black.

Burnt butter with lemon juice over fish is tasty, add a few capers too.

It's nothing at all with being adventurous I ve eaten off wayside stalls in Malaysia off barrow men in Hong Kong I love spices and new tastes new exciting dishes never turn my nose up at trying something new BUT prentenious names of ordinary food annoys me why does gravy have to be jus or mashed spuds pomme purée they don't taste any different It's these silly Tv chefs and programmes pulling us all along in trying to show our superior knowledge ALL A LOAD OF TOSH

Your inferior knowledge of French is making you look silly.

Jus is not the same as gravy, and puree does not mean mashed.

There used to be a dish called skate wings with black butter - never fancied it.

I've cooked this many times over the years - from a Rick Stein recipe, it is delicious, certainly not new fangled!
Also Eden Valley brie sounds good - but then I am biased because that's where I was brought up.

It is just a way of serving smaller portions and charging a lot, making you feel that they are doing you a favour.

I love mushrooms on thick farmhouse toast and cook them in the pan with butter, so not a rare treat for me.

I know what burnt butter is but out of curiosity, I googled it and as far as I can see, it's only bad for you if it gets to the "almost burnt the kitchen down" stage. So I won't be worried if I see it on a menu.

Also called Beurre Noisette it is butter heated (gently) up to v hot to the point where it starts to go brown, foam and separate. I sometimes add a drop (literally) of lemon juice. You have to keep an eye on it and use immediately. Delish.

They should have put the French description on the menu, rather than burnt butter which sounds revolting.

Could have probably have charged a few quid more as well for the privilege.

No l don't think we all want to put ketchup on our food and decry tasting new dishes.

But there is a lot of implied superiority in adding what are really quite cheap ingredients to quite ordinary and mundane meals in over priced restaurants with a fancy namem

I lived in Jersey in the 70's and was lucky enough to visit a lot of good restaurants. I remember having steak at one particular bistro which involved a very fancy description.

Which turned out to be a steak with cheese and shreds of onion melted on the top of it.

Tasted good and it was probably some kind of good cheese. But it was something l could have made at home

Aww now i know how to do the brown butter,then yes ive done it before- its whats i do before i add flour, to cook it down, to make a roux.Didnt know thats what it was called though.🤔
