Cakes that are good for freezing

I did a search but there are so many, don't want to try the wrong one.

Lemon Drizzle cake is always popular and doesn't cost a bomb to make, unlike fruit cakes. Just make an ordinary Victoria Sponge recipe but add the grated rind of a lemon and bake it as a traybake. While it's cooking, squeeze the juice of the lemon and add about an equal volume of sugar and dissolve it in a small pan. Then as soon as the cake comes out of the oven, drizzle the hot syrup over it, making sure that the edges get some. Yummy.

This carrot cake recipe freezes brilliantly, including the icing. I sometimes make it in two loaf tins or two 15 cm round tins. I usually leave one as a gift in our Holiday let and it never fails to please.

annifrance the thing is the fund raisers don't expect to get the actual cost of the cake back. It has been donated, so everything is profit. The cake you made would have definitely sold at the lower price. Any higher price and the visitors might not have been able to afford it.

Yes. I resent cake prices in garden centres and the like. I usual plump for a piece of shortbread which I love but wouldn't make myself, because I would too easily scoff the lot.

Fetes and fairs are different though. Much more bargainous.

Once made a gorgeous cake for the village fete, with lemon sponge, lemon icing and lemon curd filling. One of my regulars and it takes a bit of time and then it cost £5 to make. Stupid mother on the stall insisted on pricing it at £2. Felt very miffed - especially as it took money away for the village school whose stall it was.

On the Allrecipes web site there is a brilliantly easy gluten free chocolate cake recipe that uses chickpeas instead of flour so it's actually good for you too! And it goes down very quickly with the grandchildren, even the one who won't eat any pulses!

I'm afraid I'm with annsixty on this one. It amazes me how people are happy to pay even 50p for a cake. I usually meet up with some friends about once a month and we go to a Garden Centre for a coffee and cake...(don't ask!).
A latte and piece of cake costs almost a fiver! I can produce four good meals for myself for this amount. I don't consider myself stingy, and do donate to various charities routinely, but maybe I am out of touch with modern finance.

One of my favourite cakes for freezing is a delicious fruit cake made with mincemeat instead of dried fruit. It has a slightly spicy taste and keeps well in a tin once de-frosted. This one is popular with the family, even the younger members who won't eat mince pies.

Well, I must live in a terribly affluent area as our local coffee shop sells cupcakes for £2.50 and the posh village next to us has a shop selling them at £3.50. So that makes our cake sale ones at 50p each a positive bargain.

Malt loaf (or date and walnut variation of) *Auntieflo's recipe freezes well. Basic recipe is the moistest.

Small cakes (with buttercream/water icing topping) sell well in a poly-bag of five for about two pounds.

Bags people go to Spring Fairs etc for an outing as much as anything! picking up the odd book, plant, bit of bric-à-brac, and a nice cake for tea. You don't get the same satisfaction from a visit to Waitrose.

That sounds normal sort of rate to me - about £2 per item. There's staff wages, building overheads etc etc to factor in. I don't think people who own cafes or restaurants ever make huge profits( bit of a generalisation I know!)

Exactly, I can provide a good meal for 4 for the cost of two. Off topic really but last week my friend took me to Dunelm Mill for house bits and we had a coffee. The man in front ordered 3 hot drinks and three cakes and it came to £11. 84. The figure has stayed in my mind I was so shocked as perhaps so was he as he had to get his card out to pay.

I really do not like butter cream icing. Just make a nice cake from your favourite recipe. Why add yet more sickly calories by piling on sweetened fat?
Individual carrot cakes just avoid the butter cream topping. It makes them a lot less unhealthy.
