It must be the government's fault as everything else is. It says so on Twitter so it must be true wink

I don't think I can compete with all those hilarious posts before me!

However, my son's French partner makes a great dressing:

4 parts best olive oil*
1 part red wine vinegar
1 large dollop Maille Dijon mustard
good pinch ground white pepper
good pinch turmeric

She puts everything in a jar and gives it a good shake.
She's a biochemist and adds turmeric for anti-inflammatory and anti-cancer properties. Personally, I wonder if the amounts used would have any affect at all, but then I'm getting more cynical as I age!

I've started making it in the salad bowl and then pouring out what I don't need to use another time. I use a tiny whisk to mix vinegar and mustard first and then add the rest of the ingredients. Never had a problem with separation doing it this way but not such good results mixing in a jar.

But is the "natural separation" what might be called "hard" or is it "soft"?

Lillie Mon 03-Jul-17 08:59:36

Oh là là. It has to be Dijon mustard or one called Maille pour moi. Half a teaspoon with 30 ml white wine vinegar (also Maille), 90 ml olive oil. Add a few chopped chives, although my French mother used to put in chopped shallots. There will be some natural separation, so shake well before use.

Bon appétit!

I suggest you use 3 parts locally sourced rapeseed oil, 1 part British "non-brewed condiment " I.e.cheap vinegar, mix well, then throw the lot away and use a dollop of good old Salad Cream instead.

(Wails) but I did it the same as I always do.....
Maybe I have to start using English mustard instead of dijon. That'll ginger things up.

Well obviously you measured the ingredients in metric instead of decent BRITISH measurements! Of course it won't emulsify grin

Icyalittle Sun 02-Jul-17 21:12:24

The last twice I made my normal French dressing (3 parts cold-pressed oil to 1 of cider vinegar, with Dijon mustard and salt) the dreaded stuff just refused to emulsify. No matter what I did, it just stayed drippy and liquid and separated out as soon as I left it for a minute. Why? What's going on? I usually whizz it up with a hand held blender and it emulsifiers and stays that way? Is it me or is this hard Brexit and it's all the gumment's fault?
