Ingredients

Small red onion
1/2 a small red chilli (deseeded and chopped finely)
Handful of cherry tomatoes halved (approx 6/8)
Juice of a lime
1 tbsp white wine vinegar
2 ripe avocados (stoned and chopped)
Chopped coriander (optional)

Handy Hint

Not suitable for freezing

Method

1. Combine all the ingredients except the avocado and coriander if using, Season and mix well.
2. Add the avocado and coriander just before serving
