Ingredients

2 medium potatoes (mashed with butter)
Tin of sweetcorn
Grated cheese
2 eggs

Handy Hint

Could add onion to mashed potatoes or grilled bacon bits to topping for added flavour!

Method

1. Boil & mash potatoes, add butter and salt to taste.
2. Mix sweet corn and grated cheese place on top of potato base.
3. Cover with whisked eggs and bake until golden brown.
