Ingredients

6 lettuce leaves
Quarter of a cucumber
10 mint leaves
20 stalks of chives
2 large capfuls of olive oil
1 capful of white vinegar

Handy Hint

Can be made in advance put in the fridge with a cover on to let all the flavours soak into each other

Method

1. Wash all the greens and herbs
2. Chop the lettuce into small strips
3. Chop the cucumber into small cubes leaving on the skin
4. Chop the herbs into small strips
5. Place all the greens and herbs into a serving bowl
6. Add olive oil and white vinegar onto ingrediants and toss together
