Lost chicken soup recipe

My dd reminded me of the chicken soup I used to make when she was a child and would lime me to make it again. Needless to say I’ve lost the recipe. I know it was made with chicken legs and contained apple. The only version I can find online is a curried one which definitely isn’t what I made. Does it ring bells with anyone? It was delicious.

Hope someone can help as I have often fancied chicken soup. Would love to have a good recipe.

Chicken carcass or wings, chopped, onion, carrot, celery, (leek if you have one) cover with water, season, boil then simmer at least 2 hours. let it sit at 1/2 hour, strain, put in fridge until cold, then out in containers and freeze.

This thread has reminded me what a good soup a relatively cheap chicken leg makes.
Will buy one today, plus an onion and celery. I have carrots and apples. I will cut a lot of the chicken skin off as I don't like it too fatty. Any left over will be the basis for a more carroty soup with some extra stock. It certainly is soup and sandwich lunch time weather now.

Melanie thank you for that recipe! It sounds delicious. I’ve never thought of putting apple in chicken soup.

Thanks Melanie, I’ll give that recipe a go. If I remember rightly my original recipe involved cooking the chicken leg first but this one sounds delicious and less faddle.

I make a version like this, and I cook the chicken legs first, which sounds closer to the one you remember. I put two large chicken legs in a pan with a chopped onion, a carrot, and a stick of celery, cover them with cold water, and simmer gently for about 40 minutes until the meat is tender. Then I lift the legs out, take the meat off the bone, and strain the stock. I cook a peeled and chopped eating apple in the stock with another chopped carrot for about 15 minutes, until soft, then put the shredded chicken back in with a little salt and pepper. If I want it a bit thicker, I mash some of the apple and carrot into the stock before adding the chicken. It keeps the apple flavor gentle and not sweet, and it is lovely with crusty bread.

Now the weather has turned chilly there is nothing better than home made chicken soup .
To be honest I don't follow a recipe .
I start by frying about six chicken legs until the skin is golden .
I fry one or two onions some carrits and celery .
And cover with water.
I add a Maggi cube.
Bring to boil and simmer .
When failing from the bone I add pureed garlic maybe a squeeze of lemon and any vegetable at hand .
Plus herbs.
I haven't added an apple -but I could .

Sometimes I'll turn it into a curry by just adding rice and curry spices .
Or a tagine by adding couscous and tagine spices plus chopped dried apricots.
It really is something that I throw together.
I'm off shopping today and I'll be buying some chicken legs.
You've reminded me how much I love this staple.

Ah margarethughes I think that is my recipe, thank you so much. Can’t try it out until the weekend when my supermarket delivery arrives but really looking forward to it.

My Mulligtawny recipe - a lovely warming winter soup - uses apple. Onion, celery, carrots, rice, curry powder, chicken stock, and TBH I just add scraps from a roast chicken carcass. Plus the stock from the carcass, if the roast was recent.
Enough rice makes it a main meal.

My gran used to make a roast on Sunday, cold meat on Monday and them boil the carcass and giblets to death with onions and any potatoes & carrots left over from meals.

Any meat scraps would be scraped from the carcass once cooled

I use whatever part of the fowl is cheapest when I am shopping.

How long it has to boil depends on whether you are dealing with a whole chicken or jointed meat.

I put the chicken on to boil covered in water, scum the boiling water, add chopped carrots, leeks, or an onion, and when it comes to the boil again, turn the heat right down, add salt and pepper and let the soup simmer gently until the meat is tender.

teabagwoman, Oh how irritating it is when a recipe goes missing. Anyone can make soup but it's the specific flavourings which make or break it. Hope you can find it soon, or work out an alternative by trial & error.

Exactly, the devil is in the detail. I may be eating a lot of chicken soup.
