Ingredients2 leeks, trimmed, washed and sliced (quite thinly).
Knob of butter.
175gr penne.
200ml creme fraiche (low fat if you like).
1 tbsp capers.
2 small smoked mackerel fillets, skinned and flaked into large chunks.
Breadcrumbs for topping, mixed with bit of parmesan. |
Handy Hint
Stir carefully with the handle of a slender wooden spoon (in other words turn it upside down and use it like a stick). |
MethodSaute leeks in the butter till very soft. (I usually steam them a bit first).
Meanwhile boil the pasta and heat the grill. When the leeks are soft, stir in the creme fraiche, capers, and mackerel being careful not to break up the mackerel. Heat through for one minute.
Drain the pasta and stir it into the sauce, again carefully. Tip into greased baking dish. Scatter with breadcrumb mixture and pop under the grill. (It doesn't actually need baking).
