Ingredients3 cups wholemeal plain flour
1/4 tsp salt
1 1/2 tsp stevia extract powder (eg Truvia)
4 1/4 tsp baking powder
3 eggs (separated)
1 cup milk (dairy or soya)
6 tbsp vegetable oil
2 1/2 tsp vanilla extract
1 cup mashed ripe banana (about 2)
1/2 cup walnuts |

You could cook in 2 tins, reduce cooking time to 25 -30 mins if you want to add icing/frosting.

Method1. Sift or stir dry ingredients together in a bowl
2. Beat egg whites until stiff. Set aside
3. Stir together egg yolks, milk, vegetable oil, vanilla extract and banana.
4. Add dry ingredients and beat to combine. Fold in beaten egg whites.
7. Turn into greased and floured 20cm/8" cake tin and put walnuts on top
8. Bake in a preheated oven (175C/350F) for about 45 minutes or until done.
9. Cool cake for 15 mins in the tin, turn out to finish cooling on a rack
