I rarely cook chips in the air fryer or anywhere else, but when I do I use ordinary fresh potatoes, skin and all, cut them into chips, spray thoroughly with oil and the final result is really edible. Not like chips shop chips, but chip shop chips are a product on their own and no one else can come close to reproducing them, not chain restaurants, burger bars or home cooks.
