Perfect Egg Mayonnaise?

Very similar to you, 4 large eggs for 2 sandwiches.
Helmans Mayo, salt and pepper, butter.

Mash up really well.

Oreo have you ever added anything else to your sandwich or whatever you’re using your egg mayo for? Like bacon or avocado?

Also really nice with some chopped up chives in it, if you happen to have any.

So, I’ve just made some for our sandwich tonight, as we had our main meal at lunch time.

This is what I do,

Shell hard boiled eggs (for two of us I use four medium sized free range)
Cut them into pieces in a large bowl.
Add Mayonnaise (Helmens light)
Add a tiny bit of butter
Salt
Pepper
Cayenne Pepper
Sometimes some dried crushed chillies.

Mash up well.

Add to lightly buttered brown or granary bread, cut into two or four.

Gobble up.

My daughter uses just hard boiled eggs and salad cream 🤮🤮

Freshly only just hard boiled eggs, mashed with mayonnaise (Helman’s), salt and pepper, in nice fresh buttered bread probably granary or seeded.
The essential extra is either cress or lettuce (chopped). Or both.

In Northern Ireland, they add chopped onion. I don’t think I have ever seen an egg mayonnaises sandwich without onion.
Personally, I enjoy egg and tomato. The tomatoes need to be diced though.

I never add anything but DH likes his with salad cream rather than mayo - philistine.

Dd2 does a fabulous one with chopped bacon. Mine isn't half as good as hers so it's a treat every time she comes.

My Mum used to make egg and tomatoe sandwiches. Boiled egg, salad cream and mashed potatoes unskinned tomatoes. All mashed together , pinch of salt. Heaven !

Chopped spring onion and a dash of dijon mustard with the mayo. And salt.
