We were going to have roast pork etc, but I’m feeling lazy today, so we’ve had a gammon steak (so tender and delicious) with egg, green beans mushrooms and chips.
The pork will now be kept frozen until after the new year.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.
Lots of nice nibbly and buffet bits (we went for a lunch-time drinks party).
TlRoast pork, roast potatoes, cauliflower cheese, red cabbage (with sultanas, apple, spices and red currant jelly) buttered petit pois and jus. Just the thing after being ill and then very busy.
And, best of all - cold pork with bubble and squeak and pickles tomorrow.

Today we had a homemade Winter Minnestrone Soup with parsnips, carrots, chard, white navy beans soaked overnight, minced leek, shredded kale, onion, 1 small fennel bulb, vegetable stock, courgette ( zucchine ) and bay leaf, thyme and fresh parsley.
This hearty classic is simply delicious and so versatile.
Served with bakery fresh baguette and wonderful cheeses ..

Busy busy with wrapping Christmas gifts and Christmas shopping ..
Lunch today: Red bell peppers filled with mince ( ground beef ) in oven ..
Served with a simple salad of mixed lettuces, cherry tomatoes, home made crotons and Kalamata Olives.

Lunch today was a simple fresh pasta of ravioli stuffed with ricotta and spinach. Served with a freshly made tomato sauce with fresh red plum ripe tomatoes and topped with Pecorino Romano.

Monday, the 16th of December 2025 ..
Had been Christmas Shopping until lunch time and stopped at the Sushi Shop and had Nigriri & Sashimi.
Always a true pleasantry when prepared with fresh high quality salmon and red tuna.
Was 3 centigrade degrees this morning and by lunch time only 8 degrees centig.
Sunny with blue skies but frosty !!!

Today is homemade meatloaf ( 100% beef ) prepared in the traditional Italian style ..
Ingredients:
Day old Baguette - fine bread crumbs
2 large eggs
1 tsp salt
1 / 4 tsp black pepper corns grinded
Provolone with oregano
The vegetable is Braised carrots with crisp sage ..

The 24th we have a traditional " 7 Fish Plates " so, assorted fresh wild caught shellfish and a fin scaled fish - Shall be deciding at my Fish Monger´s ..
The 25th: Probably a roast leg of lamb or roast pork tenderloin or Spanish Cochinillo ( Suckling Piglet ) ..
Shall decide at the Butcher´s ..

12 / 12 / 2024: Thursday.
Today we are having Tagliolina Lemon Pasta with a home made focaccia with kalamata olives.
Very simple and easy to prepare.
Toasted bread for the eggs obviously.
Yesterday we lunched in Wetherspoons. I had a sausage sandwich on white Bloomer bread. DH had two slices of Bloomer topped with scrambled eggs and crispy bacon. We had a glass of wine. It was delicious.

I recommend spicy pork adobo or tortang talong, it is a great meal for brunch or lunch. Also, it is a cheap and easy recipe to cook.

8 Degrees Centigrade so to take the chill off, we had a chicken broth (from homemade Chicken Stock) to start off and then roast chicken with a small sweet potato, oven baked.

Today we had Wild Alaskan Salmon Teriyaki ("colas" which are the back ends of the fish ) and fresh steamed green beans ..

Today we had:
Main: A tagine of lamb prepared with onion, apricots, ginger, cumin, Extra virgin olive oil, fresh parsley, dates, cinammon, saffron threads, almonds, honey and white wine.
Couscous was served on the side.
Turned out very lovely ..

We have Spanish Holidays ( Constitution Day, the 6th and Saint Imaculata, the 8th ) thus, a long weekend.
Today we headed over to Bibo by Daní Garcia for lunch.
I adore their Japanese style Red Tuna and my husband, their Teriyaki Prawns.

Time does fly by and it is only 23 days until Christmas Eve.
Today we had gone over to Casa Labra which has been open since the 1850s .. Its main specialty is: Breaded fried crsipy Codfish ..
Heaven on earth and always packed.
Then we walked home and made a few stops along the way for a browse in the shops ..

27th of November - Wednesday.
Lunch today:
The main was Ligurian Pesto with Trenette, a wide tube pasta with home made Basil Pesto and fava beans, butter, garlic and also red skinned tiny potatoes.
The starter was a simple salad of radicchio ( magenta and white chichory) with tomatoes, anchovies and a simple dressing of red wine vinegar and Extra virgin olive oil ..
We are not grand lovers of sweets and definitely not on a daily basis.
We prefer fresh seasonal fruits and cheeses depending on the cuisine.
Time to take out our French bull dog ..
Tuesday the 26th of November ..
Today we are having Lemon Oregano Roast Chicken for our main and baked jacks ..
Romesco sauce for the baked potato which is:
2 Tablesps of Silvered Almonds
1 large garlic clove
Roast red bell pepper
2 tablesps of Extra virgin olive oil
1/4 tsp cayenne pepper
1 tsp of sherry wine vinegar
1 thin slice of Baguette style bread
Stir almonds in heavy small skillet over heat until golden about 3 minutes .. Transfer the almonds to a food processor or blender or stick mixer bowl and and then place the bread into torn tiny pieces in the processor and place the garlic and red bell, evoo, vinegar and the cayenne and process until the consistency is like Mayonnaise in texture.
Place in refrigerator covered.
Take out 20 to 30 minutes later ..
Also a great dip for prawns ..
