Today has been a rainy however, not windy, grey and cloudy day.
Nothing beats a home cooked hot oven roast with baked jacks.
Lunch today was Classic roast chicken ..

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.
Beef pot roast later, with carrots and cabbage.
I’ve just had some chilli, grated cheese and salad, all leftover from the other night, in the last tortilla wrap. 😋
Monday the 14th of October, 2024 ..
The Madrid Capital is back to grey skies and overcast, however, no rain.
Due to work schedules today, we met up at our favourite Pizzeria, Fratelli and had Napoletano traditional style pizzas and San Pellegrino sparkling water, a glass of wine and called a taxi for homeward bound.
Wednesday: 16th October 2024 ..
Lunch today is a simple pasta dish: Orecchiette with Broccoli.
A simple recipe ..
Extra virgin olive oil
4 garlic cloves
Orecchiette from the Italian Epicure Boutique
Broccoli florettes trimmed
Freshly grated Pecorino Roman cheese
Parmesan freshly grated
Easy and delicious.
Dessert today: Apples, Pears and Fresh Figs ..
Friday the 18th of October 2024 ..
We had flown over to Roma at 7.30am ( 2 hours direct via Iberia ) to attend the Wedding of the son of dear Italian friends of many years.
Lunch today is traditional Spaghetti all´amatriciana with a bit of pancetta, dried chili pepper and tomato. And divine Pecorino Romano.
We shared a pine nut and candied fruit topping on yogurt
( traditionally served with gelato) and a light rasberry drizzle ..
Off to stroll and go to the newly renovated Collseium so we do not miss our viewing and tour guide.

Enjoying exploring Roma as we had been here several times in the last decade.
We have 4 dear friends here. So it has been a lovely few days.
We shall be going home to the Madrid Capital tomorrow mid morning.

I had prawns with fresh herbs and polenta and my husband had a Spaghetti Carbonara with Guanciale (boar) ..
We shared a baked aubergine as well for an appetiser.
Espresso of course and a Grappa ..

Tuesday: 22nd October 2024 ..
Today is Persian Chicken with Pilaf with almonds, clementines and apricots ..
A simple dish in actuality and gorgeous fragrant aromas are bountiful.
Extra virgin olive
Skinless bonelss chicken breasts (1 kilo sliced into 1/ 2 inch pieces)
1 teaspoon of smoked paprika
1/2 tsp of cinammon
A pinch of cardamom
1 onion
2 cups of chicken stock
The rice - I had used Basmati today ( 4 portions )
1/2 cup of dried apricots
2 tblsps of clementine zest or orange zest or Mandarin zest
1/2 cup of slithered almonds
This recipe actually is for 4 people, however, even though it is serving 2, it is so delicious that we eat a little than 2 portions ..
Served with a very light tri color green salad and a home made vinaigrette.
Prosecco Rosé pairs perfectly with this dish.

Today, I had worked from our flat, so I had the time to prepare a Basque Cheesecake for dessert for my Dear Husband. One of his favourite desserts ..
I made a Sardinian Cassola ( shellfish /seafood stew traditional to the coast of Sardinia.
Clams / sun dried tomato / mussels / fresh basil / garlic / squid (seppia) / Italian plum tomatoes, a red dried chili horn shaped guindilla pepper, fish stock, white wine and 2 small cod fish filets, salt and black peppercorns ground / and Provençal herbes and fresh parsley ..
A baguette from the bakery to dip ..
A glass of white wine.
24th October 2024 - Thursday.
Simple lunch yet hearty ..
A spiced rubbed rib eye with baked Jacks ..
A simple tri color salad with tomato .. And a light vinaigrette.
Weather very variable .. Most of the day it was cloudy and grey skies. Sun came out approx. 15.00 ..

Though we both have enjoyed Firenze (Florence) it is not our favourite Italian City.
Today we are having a crunchy slices of fried Polenta and a loin of Sweet Spiced Pork (boneless pork tenderloin) ..
Ingredients employed are:
Pork Loin from the Butcher ( 2 kilos )
1 tsp ground dried fennel seeds
1/2 tsp of dried coriander
1/ 2 tsp of crushed black and white peppercorns
1/ 4 cup of Italian Extra virgin olive oil
1 red onion
1 large carrot
1 rib of celery
1 tsp salt to taste
1/ 2 cup of Vino Santo Sweet Tuscan Dessert Wine ( can sub Port or Muscat / Moscatel )
1 tablsp of butter
4 bay leaves
1 spring sage 5 inches long
1 sprig of rosemary 5 inches long
4 cups of beef stock strained to a fine broth
6 sliced of baguette style bread
Sprigs of Thyme
I marinated and now in the oven ..

Sunday - the 27th of October 2024 ..
Today with the drop in temperatures to 8 degrees Centigrade, we decided to head over to our favourite Chinese Restaurant.
We had different soups; me, a Hot and Sour and my Dear, a Wonton ..
We had Peking Duck with crepes which was just superbly splendid and for dessert, I had lovely Chinese tea and a fortune cookie, and husband - café and a fortune cookie.
Then we strolled home and are just relaxing with the heat on as it is truly quite chilly in the house.
Our French Bulldog and our 2 Birman are under the covers on the loveseat in my office waiting for Mom and Dad.
Heat is on .. (radiators) ..
Monday - the 28th of October 2024 ..
Today, lunch was a lovely spinach and gryère Swiss cheese Quiche for a starter ..
And served with warm Baguette ..
The side was a red and white endive salad with Champagne vinagrette, Extra virgin olive oil and Dijon mustard ..

Today, a classic of Moroccan cookery is often a loved by all dish called Chicken with lemon and olives. Can be prepared in a tagine or oven earthenware ..
Chicken organic (our preference) 2 kilos
onion or shallot or leek - sliced finely
parsley fresh sliced finely
garlic cloves sliced finely to taste
salt and black peppercorn grinded
Extra virgin olive oil
ground cumin
ground ginger
1 teaspoon of saffton threads
1 cup of Kalamata black olives
Preserved lemons are first choice if available and an indispensible ingredient in authentic Moroccan cuisine
and of course CousCous prepared separately of course.
A simple salad of tri color lettuces, tomato, radish, cucumber and a home made vinagarette.

Today, was baked red bell peppers filled with beef mince, eggs, tomato sauce - a home Ragú, bread crumbs, onion, leek, garlic and fresh herbs and dry herbs.
Turned out splendidly.
Monday is usually an errand day so, my dear husband put them together.

Friday the 11th of November 2024 ..
It has been some hell of a busy week for both of us.
Today I am preparing Prawn Pilaf Rice Persian Mediterranean Dish.
The ingredients are: 1 kilo of fresh extra large prawns, red bell, 1 dried chili pepper called a "guindilla" and are shaped like a tiny horn, celery, 2 medium large tomatoes (Raf), lemon zest, rice, dill herb and dry dill, garlic, shallot and leek.
A simple dish created in a large sauté pan (saucepan), with extra virgin olive oil and created ..
Serving with a raw fennel and blood orange salad with fresh radishes and fresh cucumber ( peeled ) ..

Savoury bread pudding (honeynut squash, kale), green salad, fruit.
13 / 11 / 2024 - Wednesday ..
Today we are having a windy, hazy and rainy on and off day. It is not a heavy downpour at all however, quite chilly.
Lunch is:
Starter: A simple homemade chicken broth from homemade chicken stock with fresh vegetables and fideos (noodles) .. To warm up a bit and not planned.
The main course: A marinated steak with shallots, Evoo, fresh lemon juice, dry red wine, dried thyme and marinated for 2 hours and grilled on a preheated oven broiler and served with a baked Jack with Asturian traditional butter and salt.
No dessert however, later approx. 17.00, we shall have some Earl Grey and homemade cheesecake with fresh blueberries.
A dear friend from Scotland who lives in Spain sent me some Earl Grey ( not in tea bags !! )
so we are excited to have real steeped tea.
Saturday: The 16th of November ..
Today I prepared a Classic Lasagne .. The kitchen aromas are remarkable.
Shall be ready at 14.00 ..
