Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

Easter Sunday Lunch .. 31 / 03 / 2024 ..
We had 4 guests + us.
Started with a very beautiful salad with fennel, radicchio, cherry tomatoes, several types of kress type greens and a lovely vinaigrette.
The Main was Roast Leg of Lamb served with a side of fresh steamed French style green beans and a lovely lamb based gravy.
Red wine: Ramón Bilbao 2019 Reserve.
Dessert: A French Toast type Spanish dessert called Torrijas.
Quite enough !!!

Full Easter lunch today
Roast Welsh lamb, Carrots, broccoli, roast potatoes and dauphinois, and roast parsnips.Creamed spinach, mint sauce and gravy. For pudding, home made fig and frangipani tart with cream and a raspberry roulade. That was enough, but we did have a cup of tea with a slice of my Simnel cake, later on
Tuesday - 02 / 04 / 2024 ..
Today is quite a chilly, pearl grey hazy day.
Lunch: Preparing Tempura and a few veggies for the side dish.
For the salsa (dip) I use:
1 cup of dashi
1/3 cup of mirin or jerez seco ( Sherry)
2 tblsps of freshly grated fresh ginger
I employ 400 grams of cod or sea bass or perch, 10 large prawns, 1 large red bell pepper, 4 white cap mushrooms, 8 wide green beans.
I dip in 2 yolks, 200 ml. ice water and 1 cup of tempura flour or all purpose.
Dessert: Was at the bakery this morning and picked up a small blueberry cheesecake ..
Wine: I picked up a bottle of Prosecco Rosé from Frexinet which produces in Veneto, Italia.

Today lunch was a classic traditional Linguine with a from scratch tomato sauce with Fresh Basil and served with lightly fried courgette (zucchine)with a drizzle of lemon.
Nice evening wishes. We shall do a light tuna salad on a crusty loaf from the bakery.
6th April / Saturday.
Today we are doing some retail therapy ! Needed a few new kitchen items .. So we had stopped for some fried calamari and a glass of wine.
We shall have a quiet dinner at home later.

This afternoon we had lovely freshly caught Perch (filets) baked with de-seeded & peeled cherry tomato, garlic, leek and fresh parsley, Provençal Herbs and a touch of grinded black peppercorns and a drizzle of white wine.
The starter was a simple salad of tri color greens with a home made Vinagrette.
Prosecco Rosé was the toast of the day ..
08 / 04 / 2024 .. Monday.
Today had alot of errands Downtown and stopped at The Food Hall of Galería Canalejas on Calle Alcalá 12.
Had a lovely paella for one, from a lovely Galician Chef Rubén Arnanz who also works at Saint James, a traditional Paella Restaurant.
This is a 400.000 m2 food hall featuring 12 different restaurants, including Japanese, Mexican, Paellas, Dim Sim, Fusion and also Vegetarian.
A nice place to stop as it was very close to the bus stop and the weather looks quite threatening and it became very grey and windy.

Which cheese you you use ?
I love Cardoon though tedious and labourious to peel stalks.
It grows wild in Navarra & La Rioja. It is quite popular during Late November through February. It is also sold in Jars.
I make an an amazing soup with it during the Week of the Epiphany.

Today was tortelli ( similar tortellini however, smaller) stuffed with spinach and ricotta - by: Italian Company Rana.
I prepared a simple (by scratch) tomato & basil (all fresh)
sauce topped with a 36 month old Parmesano grated.
This evening we shall go to our corner bar to meet up with long time dear friends, for tapas !!

We have an excellent cheese retailer called Poncelet and they have an exemplary array of British Cheddars. And they provide tastings too !!

Today we are sharing tapas for lunch which include:
Croquettes filled with cod.
Patatas Bravas - a spicy paprika sauce.
Grilled prawns served with ali oli - a garlicy mayonnaise.
Breaded calamari.
Then we shall do some shopping and stop for dessert enroute home.

Today we are having stuffed red bell peppers with a ground beef (mince) stuffing baked in the oven.
A small side salad of field greens (rocket) and assorted kress leaves, oak and bibb lettuces and baby spinach leaves with cherry tomatoes and a vinaigrette of red wine vinegar and Extra virgin olive oil. Delicate with a balanced blend of fresh organic greens which enables the contrasting leaves to shine through.
And a simple Prosecco Rose sparkling wine from Freixent.

Today, 17 /04 / 2024, Wednesday, we had Beef and chard ravioli which is a recipe from a restaurant in Nice, France.
Our 1st or starter was a light version of a Caesar Salad (no chicken) ..
Dessert was a bowl of fresh strawberries & blueberries (great for their Omega).
Wine: A rosé Prosecco with the salad and a red, for the pasta dish called Estola 2015 Reserva.

A salad Niçoise for our starter.
Main: Grilled cod fish with white wine, thyme sprigs, garlic cloves, leek, fresh parsley, grated lemon zest, de-seeded and peeled fresh red tomato, salt and freshly ground black pepper and scattered capers and kalmata olives.
Lovely Mediterranean dish !!

Today, temperatures had gone down a bit and it was quite windy.
Lunch at home, was a white Northern bean vegetable stew which turned out remarkably exceptional.
Served with:
Bakery Bread ( a baguette ) ..
And a glass of Ramon Bilbao - La Rioja 2015 Reserve.
Dessert: Assorted cheeses with assorted crackers and red apples and Valencian Blood Orange slices ..

I shall be cooking a vegetable stew of sorts tomorrow, centred around a northern British pea, the carlin. Oyster mushrooms and freshnspring greens will also feature. In a nod towards the Iberian peninsula however, I shall be adding some pimenton to the base.
