Lamb is the basis of the traditional Irish Stew. Dice it, the dog can have the easily removed fat, but don't cut it all off - you need the fat for flavour - and mix it with chopped carrot and onion, potatoes and seasoning. Add some liquid such as stock, water and some wine or guiness or beer.
Top it with sliced potatoes, brush them with oil and cook in a slow oven until the veg are soft and the topping is brown and crisp.
Yummy with crusty bread.
Welsh Cawl is similar, I have made it with leftover lamb.
Simmer in stock with carrots, swede, onion (chopped) potatoes, then add leeks, add chopped parsley just before serving.
