I've just cooked cheesy-breadcrumbed Basa, with sweet potatoes and oven-roasted Mediterranean vegetables. (It's a Gousto recipe I had ages ago) Gorgeous.
Onion bajis (sp,) veg samosas for starters. Cod in fenugreek and peas sauce served with basmati rice and spinach dahl. For dessert, strawberry flan and cream. DS and little grandson came to help us eat it.
A Nasi Goreng (Waitrose, for dh) and a Beef Udon Noodles, ditto, for me. Dh went shopping yesterday - I had stayed the previous night at DD’s, to help SiL with 3 young Gdcs while dd is away for work. Came home exhausted last night! I had thought I had recovered completely from pneumonia earlier this year, but evidently not quite yet. V glad it’s a ‘no cooking’ night tonight.
An easy pork chop tray bake - Greek style - potatoes, tomatoes, onions, peppers, courgettes, kalamatas. For us I shredded tofu, marinated and baked on on part to the tray. Bread, salad, fruit.
I cooked a chicken yesterday - I didn’t want to but it had to be used. So dinner tonight was cold chicken, cold stuffing and salad. When it was all on the plate I really didn’t want it but I never want to eat in the heat. The cat was delighted though. If the threatening thunder storm develops (please) I might try again.
Chicken, mushroom and vegetable (red pepper, cornichons and peas) risotto. Haven’t made one for ages. It was lovely. And a glass of wine to wash it down!
