Beetroot chutney recipe please

BBC Good Food beetroot and orange chutney is amazing. Liked by even people who say they don’t like beetroot!

This was my mum’s recipe.

Nice to see the recipes- gives me the urge.
One thing though, I have learned, if you don’t want to look like Lady Macbeth for the next 10 days, disposable gloves are advisable!

This is a recipe from Allotment garden recipes I have made for years.

3 lbs beetroot
1 large onion
1 large cooking apple
12 oz sugar
2 tsps ginger
1 tsp salt
1 pint vinegar

Cook beets and dice small
Peel dice onion
Peel dice apple
Place in large pan add sugar salt ginger and vinegar
Bring to boil simmer until soft
Ladle into hot clean sterilised jars (I put clean jars in oven) cover I use wax disc seal tight with lid.
Label when cool
Lasts about four weeks kept in fridge keep covered with wax or cling to keep fresh
Add chillies if you like.

Hope you like it we eat a lot of beetroots it’s nice with anything.

I have never made beetroot chutney, but I do make jellied beetroot.
If you'd like to give it a go here's how I make it.

Cook peel and dice your beetroot
Put into sterilised jars
Put a raspberry, black cherry or blackcurrant jelly in a jug and make up with half pint hot water and quarter pint malt vinegar and quarter pint cold water.
Pour jelly over the beetroot and shake a little, top up if necessary.
Put a lid on and store in the fridge.

It doesn't last long in our house. We eat it with cold meats and salad.
I've never tried it in a sandwich, it might be a bit wobbly.
