Christmas Cake - have you cut into yours?

I use the Bero recipe always have done. I might have overdone the brandy feeding this year though!
We cut into ours last night and OH gave it a thumbs up with a mouthful of crumbs so maybe it wasn't too bad!

Puzzler DH is disappointed but I told him it's just extra calories

It's never anything other than rough 'snow' in this house. I am not an expert cake icer.

One vote for a Nigella recipe. Interesting. I didn’t think of her.

It’s never too late to ice it Callistemon, even if it’s just rough “snow” icing (more calories though ?).

I prefer sultana’s to currants but am not a fan of these ‘super’ large ones. Also like red cherries - but brown ones that seem more popular now?

I used Delia's recipe as a guide plus Mary Berry's Victorian Christmas cake recipe and tweaked them .

I agree, there are too many currants in Delia's so I adjusted the ratios of fruit.

I've cut mine. I also made one for DD and family, and I got a text from SIL yesterday saying, " great cake ". I was really pleased, so tried mine. It's good. Last year, I started using Nigella's recipe, and it's better than the one I used previously.

I have got as far as icing it yet, although it has been marzipanned. There's no point in icing it now.

The last two years I made our Christmas cake using Lydll’s fruit in brandy which contains a lovely variety of fruit with sultanas as the main ingredient with apricots etc. I used Delia’s recipe as a guide to amounts replacing all her dried ingredients with the Lydll fruit. Then added other things such as almonds etc. The results have been far more succulent and delicious than Delia’s original recipe as for one thing I find it contains too many currants and not enough sultanas. However, this year since I have avoided supermarkets I wasn’t able to get my usual from Lydll. I tried to replicate it and soaked all in brandy. We have yet to try it but hope to do so later on today.

Urmstongran we like the Genoa slab cakes too. DH likes a slice with a cuppa. ?

Can I show my ignorance Dorsetcupcake what are jewel fruits? Your recipe looks much more to my taste than the traditional recipe.?

We had a Black Forest chocolate roulade from Aldi for DH and he really enjoyed it with cream as a pud.

We don`t like christmas cake ,dh likes his black forest gateau and mince pies.

For the first time in years I made my own. It was a simple boiled fruit cake recipe I have in an old freezer book. I'm not overkeen on citrus fruit /currants so changed the fruit to sultanas,dried cherries,jewel fruits,apricots and cranberries. It's not as rich as a traditional cake but tastes absolutely lovely.,beautifully moist. Another advantage is I can portion and freeze and enjoy over coming months!

I use my mum's recipe. I put the margerine (or butter), sugar, fruit etc in a saucepan and bring it to the boil for a few minutes. When it's cooled I add the flour and other ingredients before baking in the oven. The result is a nice moist cake.

Morning Puzzler. I use Delia Smiths recipe and it always turns out well. We haven't cut into it yet though as too many other goodies to eat.!
