lazigirl I’m not vegetarian but often make a lentil Dahl recipe. Got it off Woman’s hour and have adapted. Slow fry chopped onion and carrot for a while to soften (now I’ve finally got a microwave, stick carrots in there for a bit, as they take ages). Separately cook red lentils, skim off scum. To veg, add chopped fresh tomatoes, couple of small chillis, garlic, tomato paste, cumin, paprika, any spice you fancy. Add in lentils with the water they’re in. Cook down. Add salt once they’re cooked. Serve with yogurt, pittas etc.
