It’s been a while so I will start us off…….whats for supper and why?

This evening it’s chicken risotto as I needed to use up some leeks and yesterday’s roast chicken.

It’s happily cooking in the Thermomix whilst I waste time on SM!

Risotto is my go to comfort food, I just love it and I always have ingredients to cobble one together.

Something Korean for which DD2 sent the recipe. It was delicious even though the red pepper it asked for wasn't in the fridge. It used sticky rice and was topped with a fried egg.

Homemade pizzas as I thought I’d give the dough a bash and they turned out lovely.

Toppings was
Mozzarella
Red Leicester
Onion
Chorizo
Mushrooms

I make my own bread and focaccia’s so thought why not with pizzas.

I’ve found some lovely no knead recipes as I’ve arthritis in both hands. Win win

I made a delicious Pasta a la Norma tonight, a favourite. So easy if you cook the aubergine in the air fryer.

A (cheeky) small Waitrose Bramley Apple Tart and a cup of tea. 😋

Salmon fillets & a veggie stir-fry here tonight. Easy to cook around getting all the laundry sorted (got back from holiday yesterday evening).

I made myself a mushroom omelette with a mixed, dressed salad and Gigli pasta. It was delicious.
A meringue shell, crème fraiche and strawberries to follow.

Tonight I had an omelette, a slice of left over smoked salmon and 2 fried tomatoes. Then 2 very juicy nectarines.

Leftovers; cold chicken, tuna rice with mayo and tomato salad.
It will leave a space in the ‘fridge (and I love cold meals in warm weather).

Tonight will be homemade cottage pie with green beans and carrots.
Fresh cherries to be nibbled for desert and coffee.

Absolutely zonked, but hopefully recovering from a bad dose of bronchitis, so easy pingy meals for the time being.

Last night was Hairy Bikers Sweet and Sour chicken. Tonight I’m not sure as we have several leftover meals for one in the freezer. Perhaps DH will choose one and me another. Who knows.

We had an early main meal with Mum doing the cooking today of ribbon pasta with small pieces of beef and peas and chopped spring onions in a tomato and basil sauce followed by home made apple strudel.😋
Am working from 6 pm tonight so will just have a slice of toast and a coffee before I go.

Bbq with children and grandchildren, chicken skewers, burgers and sausages - all made by our local butcher, salads and early potatoes out of the garden.

Hadn’t seen that the weather was changing to warm (at flipping last) so we have roast pork, carrots and broccoli (for GC) sweetheart cabbage and cauliflower cheese for DH and I.

Sunday lunch today so roast chicken, roast potatoes, pigs in blankets, carrots roasted in butter and maple syrup and frozen cauliflower cheese - my excuse for using frozen is that it's gf and saves me faffing.

In the North we have lunch mid day (called dinner by some), then in evening we have tea (or dinner if your'e a bit posh)
Supper would be a little snack with a cup of tea or whatever if at all.
All meant lightheartedly so please don't take offence anyone.

I have just made some squash soup. I thought that it might be a bit too heavy for June but - we have flipping hailstones thundering down!!

I will have some for dinner at about 20.00 and himself will have it for supper when he returns at about 22.30!!

I am in a conundrum about what to do for tomorrow though - I was going to do some summery fish and salad; now am thinking that the oxtail stew might go better with the hail and dropped temperatures!!

I have recently sorted the freezers and labelled things!! So, at the mo I don't have the mystery of "is it gravy or is it chocolate sauce"!!! Feel quite smug!!!

Green pea penne pasta with green beans and almonds, canellini beans, gorgeous basil pesto. Salad, fruit, bread. Because basil is lovely now.
